Brandy's Easy Sweet Potato Shepherd's Pie

Ingredients 

  • 3 Sweet Potato (medium, rinsed and pierced with fork)

  • 1 tbsp Butter

  • 2 tsps Extra Virgin Olive Oil (divided)

  • 1 Yellow Onion (medium, finely chopped)

  • 2 bulbs Garlic

  • 1 lb Extra Lean Ground Beef (can use ground turkey or chicken too)

  • 2 tsps Sea Salt (divided)

  • 3 tbsps Ketchup

  • 1 tbsp Worcestershire Sauce

  • 2 cups Frozen Vegetable Mix (green beans, corn, carrots)

  • 1 tsp Dried Thyme

  • 1 tsp Onion Powder

  • 1 tsp Garlic Powder

  • 1 tbsp Coconut Flour

  • 1 cup Chicken Broth

    Directions 
  1. Rinse and pierce the sweet potatoes with a fork. Add to microwave for 5-10 mins (until tender). Set aside.
  2. Pre-heat oven to 375°F
  3. Heat olive oil in a skillet over medium-low heat. Add onion and garlic to food processor (or dice, finely). Add onion/garlic to pan and sauté several minutes until soft. Add beef and cook for about 5 minutes, stirring to break up the meat so it browns evenly. Add mixed frozen vegetables and cook for another 5 mins.
  4. Add salt, pepper, garlic powder, onion powder, thyme, ketchup and Worcestershire sauce to the beef, stir. Add in the coconut flour, then pour in chicken broth and reduce the heat to low and simmer, stirring occasionally, for about 5 minutes. Remove from skillet and put into a casserole dish.
  5. Scoop out the microwaved sweet potato into a bowl, add butter, salt and pepper. Option to add more garlic and onion powder too. Mash with a potato masher.
  6. Spoon the mashed sweet potatoes on top of the beef mixture in the casserole dish and smooth them into an even layer. Place the casserole dish in the oven for 30-35 minutes.
