Cheesy Black Bean Toast

       Instructions

  • 1 Egg
  • 1/4 cup Black Beans (cooked, mashed): I add garlic powder & salt to mashed beans. 
  • 1 slice Gluten-Free or regular Bread (toasted)
  • 1/2 oz Cheddar Cheese (grated). 
  • 1 tbsp Salsa or hot sauce 

      Directions

  1. Place egg(s) in a saucepan and cover with water. Bring to a boil over high heat. Once boiling, turn off the heat but keep the saucepan on the hot burner. Cover and let sit for 10 to 12 minutes. Strain the water and fill the saucepan with cold water. When cool enough to handle, peel and slice the egg(s).
  2. Spread the mashed black beans evenly overtop the toast. Top with the sliced eggs, salsa and/or hot sauce and cheddar cheese. Enjoy!

      Notes

  • Leftovers

    This recipe is best made fresh and enjoyed immediately. You can store extra mashed beans for 3-5 days in the fridge. 
  • Make it Vegan

    Use a vegan cheese or omit the cheddar cheese completely. You can use sliced avocado instead of cheese too.
