Brandy's Harvest Fall Salad

Makes 1 servings.

INGREDIENTS:

2 cups Salad Greens of choice

2 tbsp dried cranberries 

4-6 ounces of cooked squash (I bought pre-chopped and added to air fryer for 15 mins)

1 tbsp pumpkin seeds

2 tbsp goat cheese (omit for dairy-free)

2 tbsp pickled beets (optional)

Nonna Pia's Balsamic Glaze 

Red onion (to make quick pickled red onions, can omit if you don't have time to make).

Directions:

1. Assemble lettuce onto a plate and add all toppings. Drizzle with balsamic glaze. Enjoy!
